recipe of the week:
quinoa feta & spinach salad

ingredients-
quinoa
olive oil
2 tbsp red wine vinegar
1 garlic clove, crushed
2 tsp ground cumin
200g block feta cheese, crumbled
½ cucumber, chopped
spinach, chopped
4 red onions, chopped

1. measure and rinse quinoa (one cup of dried quinoa yields about 3 cups cooked)
   
2. place quinoa in a small saucepan with water, use 2:1 ration (2 cups liquid to 1 cup quinoa)
3. bring to a boil, cover and simmer over low heat. before all the water evaporates...
   
4. drain then toss with 2 tbsp olive oil, vinegar, garlic and cumin while still warm and season.
5. toss rest of ingredients and serve!
